My Very Versatile Apple Loaf.



This apple loaf has been gracing our cafe’s counter since we ditched bananas.

It can be found on our breakfast menu where you can have it topped with yogurt, our own made nut butter and roasted/poached or stewed fruit. ( A very lovely way to start the day!)


This loaf is lovely for breakfasts or dessert or snacks throughout the day!


I've added a few variations of this loaf. Below is the basic recipe then you can choose which variation you’d like.

Classic Buckwheat Apple Loaf

300g buckwheat flour

2 tsp GF baking powder

½ tsp GF bicarb

100g coconut sugar

2 apples (grated)

70ml apple juice (freshly juiced is best)

50ml plant milk

1 tsp Apple cider vinegar

50ml pure maple syrup

80ml rapeseed oil


-Preheat oven to 180 degrees.

-Grease a loaf tin.

-In a large bowl mix the dry ingredients (Flour, baking powder, bicarb, coconut sugar.)

-Stir until all combined.

-Add wet ingredients (apple juice, plant milk, ACV, maple, oil)

-Combine all together

-Grate 2 apples and then add to mix and stir.

-Transfer mix to your prepped loaf tin.

-Sprinkle with mixed seeds and oats.

-Bake for 30-35 mins, until the top is browning and it is cooked through. It can take longer depending on how juicy the apples are.


Option 1- Lightly Spiced

Add 2 tsp cinnamon, 1 tsp ground cardamom, 1/2 tsp ginger into the dry mix.

Once cooked, sprinkle with a cinnamon coconut sugar to finish.


Option 2- Sultana, Apricots and Almond.

Swap 300g buckwheat flour for 200g buckwheat flour and 100g almond flour.

Add in a handful of sultanas , chopped apricots and almond flakes (when you add in the grated apples.)


Option 3- Chamomile & Vanilla.

Swap the apple juice and plant milk for 120ml strong brewed chamomile tea.

Add 1 tsp vanilla extract.


You could top this option with chamomile poached apples:

-Heat a small-medium saucepan of water

-Add 3 tbsp of chamomile tea or 3 teabags

-Add 2 tbsp coconut sugar.

-Leave for up to 10 minutes in a low heat then remove tea.

-Add in sliced apples and simmer for 15 mins.


Option 4- Date & Caramel.

-Add in chopped medjoul dates & flakey sea salt to the cake mix (when you add in the grated apples.)

-Drizzle caramel over your baked loaf. The caramel will cool as it hardens.


My favourite caramel recipe is from Deliciously Ella.


Nut butter caramel

4 tbsp maple syrup

3 tbsp coconut or rapeseed oil

2 tbsp coconut sugar

2 tbsp almond butter

Melt in pan on low heat. Keep stirring. It will thicken.


Each of these loafs are beautiful served as they are or toasted or topped with butter or go for the full works and top with nut butter yogurt, fruit and Nuts.
